Minimum hygiene requirements

Training in the minimum hygiene requirements in food enterprises is carried out in accordance with the Regulations of the Cabinet of Ministers of the Republic of Latvia No. 545 "Procedure for Training of Persons Employed in the Food Chain in the Field of Food Hygiene".

After completing the training, the trainee is issued a certificate.

The content of the course complies with the requirements specified in the Cabinet Regulation No. 545.

HACCP training

HACCP is a self-monitoring system for a food business.

The HACCP training program includes the following points:

1) Insight into the history of HACCP.

2) HACCP and Good Hygiene Practice in the regulatory enactments of the Republic of Latvia and the EU.

3) HACCP principles

4) Implementation and maintenance of the HACCP system

5) Identification of food hazards

6) Identification of critical control points and HACCP plan.

Internal audit in a food company

The participants of the course will gain an in-depth understanding of the performance of internal audit in food production companies. Course program:
1) Food quality management systems, international standards;
2) Planning of internal audits;
3) Introduction to the audit, setting its goals and planning;
4) Audit management;
5) Auditor and what is its role, responsibilities, qualifications, personal qualities;
6) Audit methods;
7) Reporting audit results;  
8) Accreditation and certification.
